I have anemia, to the extent that my heart started crying in the form of irregular beats and throbbing pains this summer. Poor little fellow needed oxygen. My body, like many fellow American women's out there, hates to digest iron. For now, I have had to take probiotic and iron tablets just to have enough to make my heart a happy camper. The cause of this inability to digest iron, I am afraid, might be linked to a gluten intolerance. Since I am having a hard time letting go of my addiction to wheat, probiotics will have to do for now. More on my gluten-free adventures later, when I get around to them.
For now I must get my iron from my green-leafies and my meats. Veggies are among the easiest to prepare, however, I struggled forever with making myself meat with my meals. I can't eat deli meat because the nitrites give me migraines and tuna fish gets old after a while.
So I decided to try buying a bunch of meat.
I bought a large thing of boneless, skinless chicken breast and a slab of steak meat.
I came home and realized that I would never eat this much in one sitting. So I cut both the chicken and the beef into cubes. It took about thirty minutes. Then I gathered my-size portions into individual baggies (I did use plastic, but I will reuse them) and plopped them in the freezer.
This has saved me from meat making lazy craze. That meat has lasted me all month!
All I have to do is pull them out and stick them in my cast iron pan with veggies.
Or my new favorite way to cook it is using a pyrex dish.
I found mine at an antique store, but they still sell similar ones at many stores. Any glass bake ware with a lid will work.
You put the meat in your pyrex bake ware with your favorite spices and walk away for 15 minutes. Come back and it is done! So easy.

(Multiply by number of people eating)
2 Tablespoons balsamic vinegar
1 Tablespoon powdered ginger (fresh works too)
1 serving size of meat pre-cubed
Put in oven at 350 F.
Wait 10-15 minutes.
If meat is still not done, leave for five more minutes with lid off.
Let meat cool while you prepare your favorite greens (I used spinach).
Add a little olive oil to your spinach with a dash of balsamic vinegar.
Dump the meat on the top and add a little cheddar cheese if you like.
Enjoy!
