Here is my gluten free version:
2 eggs, beaten
1 c. organic sugar
3 T. melted butter
1 tsp vanilla
1 c. milk
31/2 T. gluten free flour mix
1/2 T. baking powder
3 ½ oz flaked coconut
3 ½ oz flaked coconut
Mix flour with baking powder first. Pour into 9-in buttered glass pie plate. Bake at 350 for 30 min. Makes its own crust.
