Inspiring Iris

Today I was finally able to hang out with my dear friend who is much like minded in our food adventures. I was so inspired by her action this year. She has been involved with providing wonderful gluten-free meals twice a week on our college campus as an alternative to the fast food. The meals are inexpensive and all local food. After she shared with me her inspiring work, we ate dinner together. We had the most wonderful salad I think I have ever had. Mostly because it was so simple, but also because of the mix of veggies in it.

Friend's Delicious Salad
(I will give the amounts for one person, so multiply by number of people eating)
1/4 cut fresh radishes
3 large spinach leaves (get organic at your local co-op because they have a wonderful mild flavor)
1/4 chopped carrots
1/2 cilantro (your going to want organic with this as well)

Salad Dressing
2 Tablespoons oil
2 teaspoon basalmic vinegar
1 teaspoon dried basil
1/2 teaspoon tarragon
1/2 teaspoon onion powder
Throw together and eat away!
